Chia Seeds...wha??

Two weeks ago, I had never heard of chia seeds.  This changed when I read this post on one of my favorite blogs, THE LITTLE RED HOUSE . It got me curious about these little, nutrition-packed seeds.  So, on my next trip to Whole Foods, I bought about 1/4 cup from the bulk bin.  I know this may seem like a pathetic amount, but these babies go for $15.99 a pound!  YOWZA!  I did see some packaged versions of the seeds that seemed to cost less than that per ounce.  I'll have to do more research. Lots of people around the blogosphere are experimenting with these seeds and finding different ways to use them.  I was intrigued by  THIS recipe for chia seed pudding (and check out the other awesome breakfast ideas on that link!).  I had heard that chia seeds soaked in water turn to gel, so I followed the extremely easy recipe, and BAM!  Chia seed pudding.  Here is how I did it: Step 1: Mix 1/4 cup chia seeds with 2/3 cup water.  ...

Let's Talk Cabbage

I've been experimenting with a lot of vegetables and foods lately.  I don't eat meat (except fish) so I'm constantly trying to find new, yummy ways to eat veggies. Last week I decided to tackle cabbage.  There are lots of ways to eat it, but I decided to roast it after seeing several pinterest recipes floating around.  The result was...YUMMY!  Ingredients: Olive Oil Sea Salt Pepper 1 Head of Cabbage   Step 1: Cut the cabbage into about 3/4 inch slices.  If they're too thin, they're not as good.  Step 2: Place the cabbage pieces on a pan that is lightly seasoned with olive oil.   Step 3: Spread about a tablespoon of olive oil on each cabbage slice Step 4: Lightly sprinkle sea salt and olive oil on each piece  Step 5: Place them in the oven at 400 degrees for 40 minutes When they come out, they look like this: YUMMY I ate these for lunch and they were SO good and filling.  ...

New Beginnings for the Faulk Family!

New jobs!  New apartment!  New US! Today Daniel starts work at Williams Gas in Salt Lake City as a Data Technician.  He was really sad to leave Ice Edge, the company he was with before, but thinks that this new job will get him closer to a career in his field (and the larger paycheck doesn't hurt either!).  Unfortunately for me this means no more daily catered lunch for Daniel = daily lunch packing for Camee.  Blah. My new job will start in August at Jefferson Academy in Kaysville (formerly Oquirrh Mountain Charter School).  I'm super excited to finally get to teach theatre full time in my own classroom!  In Park City I was the long-term sub so it never really felt like my own program and I mostly had to follow the normal teacher's way of doing things.  At American Preparatory Academy I was the assistant theatre teacher and most definitely wasn't able to do anything the way I would do it if I were the lead teacher.  While these experience...

I HEART Artichokes!

So today I’m sharing one of my new FAVORITE snacks—roasted artichoke!  This is one of those things that sounds fancy and difficult but is actually SO easy!  Lately I’ve made them both for myself and to share at parties. Daniel doesn't NOT like them, but they're a vegetable so he won't eat them.  Here’s how I do it with only a few simply ingredients…  1 or 2 artichokes Lemon juice Olive Oil Garlic (cloves or minced) Sea Salt 1. Get some artichokes!   I found these for $.88 each at Sunflower Market.  Aren’t they beautiful? 2. Cut off about an inch or so off the top of the artichoke.  3. Cut off the stem of the artichoke.  I’ve found that it practically pops off by itself! 4. Put the artichoke in a bowl (I forgot in these pictures) and immediately sprinkle the two open, cut parts with lemon juice to prevent browning. 5. It's Pretty Darn Funny, Yo

Hey friends! Kim and Kristy Graduated!

Believe it or not, 3 out of 4 of the Anderson sisters are graduated from college.  Holy cow.  Haley will be starting Utah State this fall, so she's not too far behind! The best part of Kim and Kristy graduating was of course mom, dad, and Haley coming out to Utah from Dubai! ;) There was bowling...ANTM style thanks to the blower... Daniel Turned 27! And a Pinterest Challenge...

My babe turned 27!  That's almost 30! FREAK! It's really weird because I'm only 23 so I feel like I'm practically 20 and now Daniel's practically 30.  That means we're 10 years apart instead of only 4.  Weird. For Daniel's birthday I made him a huge birthday breakfast that included pancakes, hash browns, and bacon.  He of course ruined it by getting up way before I was done. When he got home at night, I had a party waiting!  A Pinterest Challenge party!  My inspiration came from this image on Pinterest: LINK HERE So, I got 27 balloons and attached pictures of Daniel growing up on them.  On the back of each picture I wrote a little-known fact about Daniel so guests could peruse around and read them.  I think it turned out pretty great!  Here are some pics: Birthday Boy!
